VIDEO: Cooking on the Hillside Partnership with Nutrition

Cooking on the Hillside is a partnership between The Falk College of Sport and Human Dynamics, Hillside Work-Scholarship Connection and the Shaw Center at Syracuse University (SU). This video was created in collaboration with Breeanna Beach, the Nutrition Leadership Intern in charge of the Cooking on the Hillside program. During weekly cooking sessions, Syracuse City School District (SCSD) student learn nutrition concepts and prepare recipes based on those principles.

I filmed this video at one of those sessions which focused on vegetables. Students were separated into four groups to prepare different parts of the meal: pasta salad, eggplant parmesan, sweet potato fries, and vegetable smoothies.

Breeanna and faculty advisor Dr. Kay Strearns Bruening reflected on how this initiative heightens learning for the nutrition and public health students from SU and SCSD students. Designing nutrition curriculum is central to becoming a registered dietician, and Breeanna gets practice doing that weekly.
